Chicken drums were 88 cents a pound today and I am loving it.The best part of the way I did the food was the spicy brine/dipping sauce.I will give the items,but I don't measure much.I go by taste,and when ya drink ya forget to right stuff down.
The Brine:
soy sauce
italian dressing
2 choco bhuts(chopped)
5 oz my sauce
ginger
garlic
Marinade drums in above 4 hours,sprinkle with old bay,wrap in bacon.Smoke until 155 then dip,in below sauce and put back on smoker until 170.
The finish sauce is the above brine with;
br.sugar
100% maple syrup
honey
mustard
paprika
red scorp pepper
peppercorns
orange juice concentrate.
Cook sauce until reduced by half,Dip drums and finish smoking.Enjoy.
