mature pepper pods on black peppers

with plants that have black pods,

black cuban, black pearl etc

how can you tell when the pod is ripe enough to pick and save seeds? or do you just guesstimate?

most of the "black" or "purple" types either just have purple leaves or pods that start a different color

purple bhut has purple pods that turn red
black cubano has black leaves with peppers that are dark but end up red
black pearl are the same

if you crossed any of those with like a white bhut, you might eventually get a white pepper on a black plant but it would take a long time

The only black pod I know of that stays black is the Pimenta da Neyde. Gently tugging up on the pods is a good way to tell when they are ripe. Mature pods snap off a lot easier.
