Holy crap. I know I haven't updated this thread for a while, but I didn't think it had been since August. I have pics to post on my camera, but I busted my laptop so I need to figure out how to post them via this stupid tablet I'm using. I'm terrible with techy stuff but I'll give it a try later.
 
Okay, I guess I should probably revive this flog. Key's fishing thread got me inspired so I pulled a big fat slab of trout out of the freezer that I caught last month.



That will get cut up and put in my special brine in about 2 minutes, then it will get the smoke treatment (later) in the morning.

Also, here is some pepper jam I made recently. 7 Pot Pineapple, 7 Pot Pineapple Ginger, and Strawberry Moruga...

I appreciate the offer but it would be wasted on me. I don't really eat jellies or jams. Lol my last jar of jam completly crystallized by the time I went to eat some again. It was probably 2 years old.

I usually don't f**k with my smoked fish with things like garlic or spices. I like to keep it simple. A nice balance of sweet, salty, and smokey is how I have always preferred it. BUT, I tried a couple new things this time, and I must say it turned out awesome. I used some soy sauce as part of the salty element in my brine just for shits and giggles. Then I warmed up some of my above mentioned 7 Pot Pineapple Ginger jam...



...and brushed it on a couple of pieces as a glaze for the last half hour or so.



This is what made it onto a cooling rack without getting mouthfisted.

I've never seen fish more appetizing ...
 
I just can't imagine not liking that, fish or not ...
 
Maybe I need to try smoking some fish, to see if I don't like it prepared that way ...
 
Mostly people have always posted smoked tuna, so it was easy to ignore it - but that's white fish (the whiter the better, usually, for me) and it looks good ...
