ingredients mustard as hot sauce ingredient

Hi All,

I was looking at the ingredients on the backs of a few hot sauce bottles. Mustard is listed as one. Is this just your normal yellow mustard? Thanks.

How would we know what type of mustard is in this unknown hot sauce?

By the way try some mustard powder if you don't want to add extra vinegar and salt ;)
 
Mustard adds a great complexity to hot sauce. I like to crack mustard seed in the coffee grinder (leaving it very coarse) and soak in cool water in the fridge overnight. Then add it to the end of any hot sauce boil down. Simmering will diminish the flavor.

That's it! Another great ingredient in hot sauce.
 
Nice idea cracking and softening the seed overnite...

What happens at my place, I take the seeds of celery, cumin, coriander, and mustard , with the grains of paradise, and coarsely "mortared" Jamaican allspice, take it all and throw it into a warm skillet, toast it a bit, and thats a good part of my "Calypso' hot sauce seasoning...

You also have the choice as probably already mentioned,...muatard powder or mustard flour

One of them is called "D'Elidas". There are a few others. I'm going to make some sauce with brown mustard and try your tip (mustard powder). I'll let you guys know how they turn out.
 
Or make your own mustard and then use that for some real flavor. I made a 4:1 yellow:black mustard that I ground in a mortar and pestle and thinned with caribbean red, garlic, and cider vinegar puree and sweetened with thistle honey and it is absurdly good. My girl hates mustard and really dislikes spicy food and she even loved this mustard. I could only imagine a bbq sauce made with it, now my mind is working. I will be back with an update on the bbq sauce I make.
