My first batch

made my first batch of hot sauce ever today. i am pleased with how it turned out. i was using a pineapple base for sweet/hot mix. used a pickled pint of mixed peppers (orange habs, serrano, bulgarian carrot, cayenne) with garlic, mustard seed, 1 15 oz can of carrots (for color/consistency), 1oz of lime juice, and a cup of sugar. it is not as hot as i would have liked, but pleasantly spicy with lots of pineapple sweetness! pretty close to what i aimed for.
 
Way kool :dance: I remember the fondness for my first sauce! Only one so far that was disappointing in the heat department was a lemon drop-cranberry sauce. Lemon drops don`t seem to hold there heat at all while cooking :eek:

Then again you can keep a few dried supers around to drop in to your sauce to KICK it up :rofl:
 
Welcome to an amazing hobby that will occupy your mind at the most inopportune times you can imagine. There are several things that can affect the heat of your sauce. Sugars and cooking are just a couple of them. I usually overcompensate with the peppers and bit the mark I'm aiming for. You didn't say whether or not you cooked the sauce though and I just assumed you had. There is alot of great information here so I would recommend that you just read, read, read. Soon you'll be debating fermenting versus just cooking and having a blast.

Your ingredients sound good and should have had a decent punch from the chiles. A cup of sugar sounds like a lot to me, based on the other ingredients and sugar will definitely cut the heat. Carrots and pineapple will also cut the heat as they have natural sugars in them. Maybe next time, try it without the sugar to start with, and add sugar a tablespoon at a time, tasting as you go.

Sounds like you had fun and like the sauce. Got any pics?

i did cook the sauce, for appx. 15 minutes of full boil over medium heat. i did not want to scorch the sugar! i say that it is medium heat (for me) but for most "normal" people it would be in the area of scalding. i know you guys know what i mean.

for some reason, i cannot post an image here. it says i am not allowed to use that image extension on this board. i have tried two picture hosting sites (facebook and photobucket).
 
here is my pic...boy is this good! thanks to all the recipes and suggestions on this site; i don't think i would have been nearly as successful w/out y'all's help! (yes i am from the south, hence the y'all)
