My first go at making sauce

Hi all,
 
Thanks to the wealth of info on this forum I decided to have a go at making some sauce. Just thought I would post it on here.
 
I would of had no idea about hot filling or ph levels without Making Hot Sauce 101, so thanks for that.
 
Anyway,
 
Orange Hab
onion
garlic
red bell pepper (we call it capsicum)
carrot
Lime juice.

Turned out pretty good, in a first go kind of way.
 
Definitely tickles the nostrils.
 
Looks like a lot of headspace in those bottles for HFH (should try to keep it at about 1/2", I think), but other than that, sauce looks great! A little bit of sugar or honey can go a long way to round out any rough edges too ;) (maybe a pinch of salt too)

Congrats on your first sauce! Looking forward to seeing what else you come up with
