As for the powder turning into flakes, a mortar and pestle would do the trick. I've made some pretty fine powder like that. Need to make sure it's properly dry though.

Thanks guys! After my big harvest I went a little crazy and made flakes/powder out of everything. Got 6 different blends in ziplock baggies in the spice drawer. As for making them into powder from flakes, I used a coffee grinder which was a massive mistake on my part. The next morning I had completely forgotten and I managed to ruin an entire pot of coffee. Oh well, at least now I have a dedicated powder grinder.

Always use separate grinders and a small handful of cheap white rice for cleaning. It wont get it all out but it helps.

Ziplock baggies will eventually let air and moisture in.
 
I have been using small Mason jars.

I prefer flakes. Not only do they add flavor but they also add color to a dish.
