My first successful attempt!

Thought you'd all be interested. As I have nothing overly interesting, and I am waiting on a shipment (1oz) of Xanthan Gum, I got impatient and made a sauce!!
Blended up some jalapenos with vinegar, put em in a pot with water, habaneros, some other things, and pineapple. It was very green, great colour in fact, until I added a secret ingredient. Natural ingredient to colour it purple :)

Theres a habanero:jalapeno ratio of 1:3 in approx grammage, I will be doing something similar later this season with scorps or brain strains or something :)

Recently bottled up some "smoked cranberry" sauce for the holidays, mine looks similar but I did add fresh blueberries which complexed the flavor...

Seeing as everybody is guessing, I will inform you that my secret ingredient is purple carrot. Born2Burn Show was the closest to the correct answer.
I do appreciate all the thoughts about colouring and flavouring agents, gives me ideas :)

Might turn this into a game for a give-away next time. Should have high yeild crops soon :)
And I got my xanthan gum today, so will experiment with a new sauce in a couple of weeks.

I might even add some extra jars into the next batch for give-aways. see how we go :)

Careful with the Xanthan Gum, it can turn the sauce into paste. I usually use 1/4 tsp per 48oz. P.S. I just ordered some purple carrot seeds.
 
Wow nice color, I've bought the red and yellow carrots and the yellow, orange and red beets, but I haven't seen the purple carrots down at our "Fulton St" markets....which pretty much have anything.
What proportion ratio of carrots were used in comparision to the other ingredients to achieve that color?

Well the color bleeds over time, I used 1, wasn't happy with the color from a 1/4 of one so gradually added more. Yeah I have read how effective can xanthan gum is, my plan is to experiment to learn these things with experience and theory. More fun!

Cool, years of canning beats finally pays off...real interested in the purple carrot.
