smokers My X-Mas Smoker

I have a similar design but from Mecco, its electric so no farting around with coles. First time I used it I smoked a beef roast, a pork roast, a lamb roast, a small chicken and a salmon. I was really surprised with the flavour of the lamb.
Cold smoking is really tricky and that's where the top vent comes into play.
So, you didn't even have to drop hints for the wife?
 
first off...check your thermometer on that thing out..make sure its reading true.

for better temperature control, use the minon method. it works great

as for modding the charcoal pan, i would buy a charcoal grate and build a charcoal ring on top of it.

i use the 'Piedmont Pan' method in my cooker now...basically its a big terracotta pot with foil around it.
