New sauce bhut jolokia and garlic

HI Guys,

I made 3 batches of sauces now but it lacks the heat that is to be expected from the bhut jolokia

ingredients

6 dried bhut jolokia pods
8 cheery bombs
6 garlic colvers
1 medium red onion
1 medium tomatoe
375g tomatoe puree
1/2 cup white vinigar
2 tablespoon balsamic vinigar
1 table spoon salt
1 table spoon pepper
1 tablesppon sugar


there is some heat there but not like people clain it to be can some advise where i have gone wrong?

try cutting back on the vinegar i would but each to there own taste if you like it thats all that matters
 
just cut out this and see how the next batch is (2 tablespoon balsamic vinigar)

can you post how you would make your sauce like ketchup style not liquid like tobbasco sauce


i only have 6 more bhut chilli pods left don't want to waste them

I've never made a chilli sauce but I'd just double the number of chillies in it, (there might be a reason why this wouldn't work).

Are you sure your bhut pods are the real thing? Even if the person who sold you the pods or seeds to grow them fully believed they were 100% they might have accidentally crossed.

I once cooked ALL of the heat out of a Habanero pod. Still not sure how I managed it?

Well cannot say for 100% there not crossed but I will try this reciepe next

1/2 ounce stemmed, dried bhut jolokia chiles
2 cloves garlic
1 tablespoon white vinegar
1 (15-ounce) can diced tomatoes with juice
Salt
Ingredients
In a bowl, add dried chiles, and cover with hot water. Rehydrate for 15 minutes. In a blender, combine chiles and 1/3 cup soaking water, and then add garlic and vinegar; purée. In a bowl, add chile purée to tomatoes, and combine.

let you know in 1.5hrs time its 7.20pm eastern time now

You could just not put any vinegar in at and use a tablespoon of lime juice. I would go a step further and put everything into a sanitized container with 2 tablespoons of whey from a tub of plain yogurt then add a teaspoon of salt to a cup of warm water and pour over the top. Put the lid on and allow to ferment for 60 days. Won't loose any heat and the flavor will be alot better.

I don't know if this will help, but when my sauce is too hot, I cut some tomato paste in to cool it down. Maybe cut back on the paste and then you can add it if you need to.

I would have thought the previous recipe would have decent heat. If this second recipe is not hot I would have to say that you have some bum pods. Have you tried a bit of it straight? 1/2 oz of jolokia powder should be quite hot for these proportions. I make a hot wing sauce and it takes 1 tablespoon added to 1/2 cup wing sauce and the results are very hot wings.
