i made shallow and pea risotto last night because of you. Also because i found  2 bags or short grain rice for risotto. I love the recipe, it takes about 12-15 minutes to make, depending on how fast you can prep and how fast your pressure cooker heats up. you pressure cook it for 6 minutes then add the parmesan in the end.
 
Never heard of pressure cooked risotto before.I go traditionally..adding hot broth slowly and stirring constantly.Butter and parmesan in the end... and a pinch of dried thyme.
 
it surprisingly comes out extremely well and relatively authentic. definitely worth it if you don't want to spend the copious amount of time stirring the risotto and tending to it
