smoking Not Over-the-Top Expensive Knife Set

I have one glaring weakness in my kitchen and its my knifes. I've been using crappy knives for years. Can anyone recommend a good knife for a reasonable price? I'm looking for something to last me for a very long time and that performs well for trimming before the cook and slicing after the cook. I see some sets that are over a 1K and ain't going there but am willing to pay what it takes for a nice knife.  I'd like the set to include a nice bread slicing knife as well.

You probably know that the quality of the steel is the #1 thing to look at in a knife.
 
The thing i wanted to add is that a knife SET doesn't really fill any needs for me.  I only have 2 good knives: an 8 inch chef's knife (J.a. henckles carbon steel, i actually think its this one) and a paring knife that I use almost exclusively for hot peppers. Ive used only these knives for 4 years and never had a need for anything else in the kitchen.

I think that's all I would need as well, maybe add a bread knife or boning knife
 
Sometimes sets are overrated, but that one time you need that other knife, you have it! Plus makes a nice counter piece in the block.
 
If you really want  best bang for the buck , try and find a commercial supply place that sells to the public and carries   Zwilling J.A. Henckels  - Twin Master line.    
 
The bright yellow handle could be a deal breaker though if you want looks and function.

Henckel is/was phasing out the Four Star and Five Star line. Both have the exact same blades just different handles. Both are made in Germany. I see them pop occasionally at places like Bed Bath and Beyond at really good pricing. On top of the sale price BB&B often have 20% off coupons.
 
Occasionally Wusthof are on sale too but like Henckels, you need to see if they are made in Germany. Frankly im not paying a lot for Chinese made blades when i can spend a little more for German or Swiss made products.
