I'll settle this. I think my new avatar qualifies me as an expert in such things. Home fries are boiled, then sliced into thick rounds and then fried. American fries are potatoes that have been boiled and then roughly ground or grated and then fried. At least that's how it's been in every restaurant I ever worked in and most I've ever eaten at.

That right there is a good lookin' omelet! Do you pull the edges in towards the center as the egg cooks on the bottom, or just let it do its thing?
Back to basics, fried potatoes on the side topped with Coastal White Cheddar and Harissa sauce and oregano.
Lunch, simple Omelet.
