Strong and/or sweet flavors are usually specialty sauces. Blueberry, peach, etc. But some flavors just complement. Onion, garlic. That would be a savory sauce... good for almost anything. You have to decide if you are trying to make a sauce good for anything, or a specialty sauce good for pork chops and ice cream only.
Showcase the pepper for a pepper sauce. Good for just adding pepper flavor and heat. Or go more gourmet.
