Ingredients
3 cups white cake flour
3 cups rough wheat flour
2 table spoons olive oil
1 1/2 cup water
1 1/2 t/spoon ady (yeast)- proof in water at 37 c with 1 tablesp sugar)
2 spoons paprika
1 tablespn salt
2 tablespn basil
1 tablespn coffee (option)
a- Proofing- Mix water, sugar and yeast- sit for 30mins
b- Mix flours with salt, basil, paprika- make a well- it can wait
c- add olive oil- into well in the centre
d add water mix slowly into flour pile well.- good idea to use a bowl.
e- roll up and kneed until non- sticky- may need extra flour- mix until not sticking to fingers
f- let sit for an hour - covered with olive oil (not a lot)and hot -damp clothe above.
g- re-knead after the hour
h- then an hour later- cut in four part and roll out or freeze.
i- roll out almost bacon thin- add ingredients
j- heat oven to 250c
k- toppings on and then into hot oven- 20 mins
It's really perfect. Oven 250 for 20 mins with very little tomato paste, pineapple paste toppings, not too much!!!Be confident and be sure to be confident. Feel the dough, keep trying- don't give up. Be patient with yeast.
