Need to get those temps under control and get an external thermo though. Is the bottom of your drum the clamp on lid? If so maybe some woodburner glue or some high temp gasket material will do the trick for you. You also might be able to put some gasket around the lid so when you set it on it seals too, but that's not usually a problem, uncontrollable temps is almost always air leaks down by the fire.
Some o that pork or chicken shredded up would do for some really good tacos, burritos, tostadas or nachos.
