South Park facts: Trey Parker and Matt Stone usually begin to write, then animate and edit each episode only 6 days before its airdate. To date, they've only missed the deadline for a single episode, when their studio lost power.
The reason why they can write, create and edit each episode so quickly is because beginning with their 2nd episode, Parker & Stone used computer animation software that emulates the paper cutout look of the first episode, which took 3.5 months to create. Otherwise, it would take them 3-6 months to create each episode. This is why they can often tackle social issues, and poke fun of celebrities so soon after something that celebrity says/does.
Speaking of which... In every single episode, a celebrity either cameos or is mentioned in the episode.
Also in every episode, Parker & Stone deliberately hide an extraterrestrial somewhere.

When Parker & Stone submitted their first cut of "South Park: Bigger Longer and Uncut" to the MPAA for rating and got an NC-17, they responded by re-editing the film to be significantly more vulgar. The MPAA relented and gave their original cut an R rating after several progressively vulgar re-edits.
In response to the episode in which Parker & Stone lampoon Scientology, the Church of Scientology hired people to follow them around and ordered them to find anything they could to blackmail Parker & Stone, including attempting to hack into their bank accounts, emails, look through their mail, etc.
When the episode aired, and on all subsequent episodes lampooning Scientology, Parker & Stone deliberately changed the names of the cast & crew in the credits to "John Smith" or "Jame Smith" in protest.
Electronic Arts once had to do a mass recall of "Tiger Woods '99" because an employee slipped an entire episode of South Park into the game without anyone else in EA noticing before it was released.
Parker & Stone somehow got hold of a pre-production script of "The Day After Tomorrow" and planned on doing a shot-for-shot South Park version of the movie, until their lawyers talked them out of doing it.
The original plan for Kyle was for him to die in Season 5 and make Butters a regular character, but Parker & Stone changed their mind about Kyle, and kept Butters as a recurring character.
The reason why Parker & Stone eventually stopped killing Kenny in every episode was simply because they ran out of different ways to kill him.
George Clooney and Jay Leno were such big fans of the show, that when they approached Parker & Stone about cameos, they were offered the roles of Stan's dog and Cartman's cat respectively. Clooney & Leno happily accepted.

Chef's song "Chocolate Salty Balls" hit #1 on the UK Singles Chart.
