Real Mexican Food?

Lucky for me because of all the farming around here we have a very large Mexican population so i have a good selection of taquerias(grocers and/or eateries) to choose from. Once you've had some authentic you'll be able to bulls-eye the differences quickly. I even have a choice between two large mexican supermarkets here, Acapulco Tropical supermarket and Bravo Food stores.
 
look for a restaurant that has the menu in spanish with english translation. I have a fair number of places around me - one of my favorites is a little place that has about 6 tables inside if you wanted to stay. great food. If you have the chance get a taco or torta with lengua (beef tongue) - sounds strange but it's very good.

What is strange about beef tongue? I love it cooked with a Madeira wine gravy and rice...

Tex-Mex has its origons in the Rio Grande Valley north to San Antonio and fajita's exemplify the style to a tee. Strip and skirt steak not so long ago were considered meat for the poor and are now hot items at the meat counter. The Tejano's I grew up with would marinate the meat with garlic, cilantro and lime and then grill on high heat. Served with warm flour tortilla's. Later when chain restaurants picked up on the popularity of fajita's the marketing gurus came up with chicken and shrimp fajita's. Too bad noone told them there is no such thing. Fajitas are beef only.

Menudo? Okay. Tripe? Not my fav. Lengua? Tongue? I NEVER eat a food that while I am tasting it the food is tasting me back!

Well, my Chorizo has some "interesting ingedients" for sure, but it's from a local Mexican grocer...and it's delicious.

P.S.: I lovvve that vintage tripod...I couldn't get as clear shots before..w00t!
 
That sounds like cheap-ass sausage, and what's with the "Remove Casing Before Cooking" good sausage has a natural casing.
 
Well, it likely is, but is all they have around here.

I think ya forget, you live in one of the most diverse populations on earth..most of us don't. You can find ANYTHING in NYC..not in Spokane, WA. ;)

The mexicans in WA tend to live in the central part of the state where the farm work is. Yakima, etc.

What does the casing look like it's made of? Paper?
 
Can't tell for sure, but i'd bet on a collagen casing.

It's not 'the real stuff', but IDK where I'd find that here.

All of the chorizo the small mom and pop Mexican groceries sell here list the same ingredients and they all say remove casing before cooking. Well, at least all the pre-wrapped ones do. The fresh made ones from the butchers don't list ingredients on them, but the guys at the meat counter all say to remove those casings as well before cooking. I've had both and obviously prefer the fresh stuff, but the pre-wrapped is really good too. And yeah, it looks to be a type of collagen casing.
 
Chorizo is a pork sausage....either cured or fresh.
Poutugese make them, Spanish make them, Mexicans make them, but they're all pork.

Beef chorizo?

I've never heard of a beef chorizo either.

I've never had beef tongue before, but I've actually eaten lamb tongue a few times at a Lebanese restaurant near my house. Really good food. Also, as far as real Mexican food my Uncle lives about 15-20 minutes from the border in So Cal. There's plenty of them there and plenty of spanish speaking with the locals eating there and the cooks. To bad he lives so far from here this talking about real Mexican foods making me really hungry. I love the stuff.

PS. Yeah, pork is what I've seen. and tasted. The others are fakes.

PPS. Yeah I know you usually cook it out of the casing, but I thought that warning was because it was not natural casing. If you want you should be able to cook it in the casing.
