what peppers work best with Strawberries when making a nice fruity hot sauce? i have some cowhorn cayennes that i am interested in using. my habs are not mature yet and the strawberries won't last that long!
I would imagine Habaneros would go well with the strawberries. If you are making sauce, vacuum seal and freeze those strawberries until your habs are ripe. You won't have to worry about any texture with the strawberries in the sauce, so freezing them won't matter.

I have to agree with Habaneros or any pepper that has a fruitiness to it like Scotch Bonnets or Aji Lemons. Any pepper that would compliment the sweetness and flavor of the berries.
Personally I would steer from using Cayenne after a fruit based sauce I made last with with apples and pears. My vote would go for freezing the strawberries and using the habs when they're good to go. Keep us posted!
