Red Serrano Pepper Sauce...BANG!!

This is a winner!  No need for aging.  An initial slight tomatoey flavor from the red serranos followed by reasonable heat.  A hint of oregano at the finish.
 
THE PLAYERS:
 
25-30 red Serrano peppers
3 red Jalapenos
6 Caribbean Red Habs
1 large carrot
1/2 red onion, sauteed
1 head garlic, roasted
1 C. ACV
1/4 C. lime juice
2 1/2 TBLS Mexican oregano
1 TSP cumin
salt to taste
 
I used the typical cook-blend-cook method, although I also strained this sauce to eliminate the seeds.

I needed to try it on food, something quick.  Cheese quesadillas with a few chopped pickled peppers in the middle seemed a good idea.  It was.  Pickled aji lemondrop, and peppadews.

Corn is whats up. Little tip from a mexican: put a little oil just to coat the tortilla on pan. Cook it till you see the tortilla start to blister a bit. If you did it right it will be slightly crunchy but still soft.
You're right, but I was a little lazy this time.

Now that I really think about it, I've never really seen corn tortilla quesadillas, except...in my house!  I'm not Mexican, but I did eat a lot of Mexican food in east Los Angeles.  Maybe it is weird?

Quesadillas are really Tex-mex and traditionally made with flour but people from Mexico prefer corn and dont really make quesadillas but if they did it would definitely be with corn. So its like mexican meets tex-mex. Thats how my mom made them but then again she is Puerto-rican. So maybe it is weird.
