Ripe Jalapeno

Thought I would try a ferment with only red Jalapenos, came up a little short, had to add two green Big Guys to top off.
 
Vidalia onion, garlic, four color peppercorns, coriander seed.

Yes, the Easy Fermenter lids are, well, easy.
 
I still have not found a glass weight I really like.
 
Ferment is looking good! How long you gonna let it go for?
 
If you happen to get another batch of jalapenos, you might want to give sriracha a try. Really good stuff, and recipe is pretty simple.

Probably a month or two.
 
I have six Jalapeno plants going, probably get up to another hundred pods before first frost.
 
Might do some sauces, have not decided yet.
 
Love those fermented jalapeno rings. Just finished a whole jar almost identical to yours except used red onion, mixed green/red jalapenos, and no coriander seed. And added a couple habs in for more heat. Ain't even been a week and the whole jar is almost gone.
