     Yeah I don't know if tossing cookie sheets of roasted pods into the chest freezer counts as "quick freezing", but they certainly turn out individual. I also like how no frost forms on the inside of the bags when they're frozen out in the open like this. They stay nice and clean and dry. But the best part is the sound they make when they rattle around inside a bag. They sound like a bag full of marbles. I don't know why I get such a kick out of that, but I do.
Not to take away from all the awesomeness you have going on here but I just gotta point out a little bit of info you mentioned about how no frost forms on the inside of bags when they're frozen in the open first before bagging. My mind is blown over such a simple step that would end my biggest bitch about freezing pods, fresh or roasted. :clap: :clap: :clap:

     Cool beans! Knowledge is power!
     It does make for more frost on the inside of the freezer, though. So be warned. But peppers are more important than the freezer!
 
I was going to ask if you froze them right after roasting or if you peeled and deseeded. Guess you answered my question. I was debating if I wanted to roast a bunch and just freeze them like that as it can get pretty time consuming.

I have roasted a few batches of peppers this year and doing poppers with goat cheese this weekend
I didn't grow the Caribbeans this year but plan on it next year. I saved seeds from what u sent me.

     I just freeze the habs and superhots as is. The skin is thin enough that it just falls apart when I cook with them. But on chiles, it's like leather.

     You want to try some? I picked some really tasty off-pheno bhuts yesterday, I could send you a SFRB so you can get hooked on roasting like parker49 did last year.
