hot-sauce Rocketman's Original Jamiaca Me HOT Sauce

Rocketman has created a new sauce.....and has sent it to a few of us THP'ers for a first impression.....


I hope that future posters are more thorough than I am....as I'm dead dog tired and won't do this yummy sauce justice.

I have no pics.....yet.

Ingredients:

-Red Habanero
-Onion
-Sweet Potato
-Rasins
-Pineapple
-"spices"


However, I couldn't wait to try this sauce....cause it's been calling to me from my bar since yesterday afternoon.

So....I opened it. And, with absolutely NO FOOD to try it with....here's my take:

The initial flavor is mainly habanero....and possibly sweet potato (which gives it a really unique, creamy consistency) which I really like. With the list of raisins and pineapple, I was expecting a really sweet sauce, which was not the case. It has a VERY tiny hint of sweet undertones, but not enough to limit the uses to put it to. I'm still thinking southwest/Mexican with this one...but I'm betting it'd be great with many more types of cuisines.

Heat is quite livable. I'm giving it a 4-5 out of 10.

Honest summary.......AWESOME sauce with only two main gripes:

1) Had to take out the shaker top.
2) Needs a bit more salt....but not TOO much!

I feel honored to be one of the first to try Rockeman's new sauce. I look forward to more!!!!
 
Wow, thanks Paul for the great review. No fear the reducer is gone and a bit more salt is noted. I was really amazed by the way the sauce turned out myself. I get the initial flavor of the sauce upfront and then, and I love this, the heat starts as a warming and builds to it's full heat. I timed it once and took about 15 minutes for heat the dissipate after a teaspoon. Thanks again for the review and looking forward to the others.

If it's extract free sounds like a good all-around family sauce worth putting on the list.

Let's get the critical part out of the way:
I agree with P2K that it could use a touch more salt, maybe just a little more acidity.
I used the shaker top just fine, it just took a hard shake.

Enough of that.

This is a wonderful sauce that magically changes flavor with the food it is paired with, and has absolutely the PERFECT amount of heat for an everyday sauce. Perfect!
I caution anyone trying this sauce...reading the list of ingredients does nothing as for interpreting what this sauce will taste like.
I thought it was going to be sweet. Raisins, Pineapple, Sweet Potato... Boy was I wrong.
It seems that all of the fermentable sugars were wonderfully gobbled up by the fermentation process, leaving behind a melody of flavors that compliment each other nicely.
Many sauces use carrots as a thickener. We're all probably used to that flavor.
Rocketman used Sweet Potato instead, and while they have the same color, the sweet potato brings a whole new flavor dimension to the party.
The fermentetd sweet potato gives this sauce wonderful texture, and a unique flavor that takes a few drops to get used to.
I don't know how to describe it. Yammy? Malty? YAMMALTY????
First taste, you think, "Wow, this sauce is a bit different".
Next taste, "Yea, I get it!! Good stuff".
Third taste, "Everyone stand back, this sauce is mine!!!".
I started to put this sauce on everything, chips, toast, bbq, fried chicken, leftovers...
Before I knew it, I was stealing my kids' mini corndogs and dousing them in it. It actually goes nicely with salty meats!!

The sauce clings to food nicely. It goes well with any type of food.
I would recommend pairing it with bbq or roasted meats. Saltier foods.
This sauce can stand alone as a chip topping, or compliment just about any dish.

The true value is in it's unique flavor, though. I would not use this sauce in recipes that call for a dash of hot sauce. Don't waste it on that!
This delicious sauce deserves to be a compliment to other foods, and enjoyed by discriminating palates!!

Now why do I have this feeling like there's going to be some pulled pork being made this weekend and maybe not just in the RocketMan's Silo. I'm really glad that everyone has enjoyed the sauce. I think my favorite part of making sauces is using outside the normal ingredients like the sweet potatoes. Oh, and have no worries when I have a new sauce to be sampled I'll give you a buzz.
 
I am going to wait to do a thorough review, but I just opened this an used it on a chicken breast and I think it is terrific. Wings are thawing as I type. Stay tuned.
 
I'm one of the lucky ones who had the honor of trying RocketMan's Jamaica Me hot sauce. I won't list the ingredients, as they're listed by my co-reviewers.

Impressive sauce, I must say. You can tell by the bottle itself that this sauce is a prototype, but a first glance, I like the bottle, the color, and the label, though some tweaking is needed to make the label easier to read. Also what was interesting is the sauce had a wine shrinkwrap.

I love the texture and viscosity of this sauce - it pours on nicely and stays put right where you poured it.

The flavor is hard to describe, and a bit surprising given the ingredients - sweet potatoe, raisins, pineapple. I expected a sweet-n-tart-potatoey taste, but that is not the case. The flavor is fantastic, and I believe would work on anything. Straight shots are good too!

Heat wise, I agree - spot on perfect for a wide audience.

I've been experimenting with this sauce for a while, putting it on steak burritos, mac-n-cheese, bread, and made it the star of tonight's dinner....

Dinner is a salad with a dressing made with Miracle Whip & Jamaica Me sauce, noodles with Parmasian Cheese and Jamaica Me sauce, and toasted crispy english muffins with butter, cheese and Jaimaca Me sauce.

Thanks Dave. Yep, this is the first test batch of this sauce I've made but by no means, based in part on the response I've recieved, is it going to be my last. Developing and tweaking sauce recipes is something I really enjoy, especially when it involves outside the box ingredients.

My daughter actually has asked if she can work on the label, very creative girl, and I can’t wait to see what she comes up with.

Funny thing about the wine bottle shrink-wraps. I had already ordered some of the ones like we all use and while I was looking at one of my homebrew sites and preparing my list for my next order I noticed the wine bottle shrink-wraps. They had several different colors and started to wonder if they would fit a 5 oz woozy. The price was good so I figured what the heck order some and give it a try. I was surprised that they worked perfectly and I really liked the way they looked on the bottle.

Jalapenos are extremely versitile and mix well into just about anything. What comes to my mind would be a mix of Grilled Pineapple, Kiwi and maybe some Blood Orange. Grilling the Pineapple will give it those caramel notes and the Blood Orange will help to balance the sweet/sour. Good luck with it and have fun!
