JungleRain is playing it cool, probably just waiting to drop the MangoBomb! I gotta give him props out of the gate for procuring mangos in the off season. He's already points ahead!

I was going to do a Prawn with green (unripe) mango curry but I couldn't find any huge prawns.......
so I decided to go with something else....still with an asian style

Thanks, TB. It is a cast iron wok. It worked good on the bbq burner, that burner seemed to keep the heat up better than the stove burner. I just edited the post to include the wok description. We had some leftovers for lunch today, and it seems hotter than last night.

:hell: The Ingredients;

Chicken thigh (boned)

Ripe fresh Mango
Naga Morich
Green bell pepper
Red bell pepper
Coriander
Thai Basl
Cucumber
Spring onion
Red onion
Garlic
Cherry tomato

Oyster sauce
Soy sauce
White wine vinegar
Tomato sauce

Brown sugar
Salt
White pepper

Chopped Ingredients;

First I marinade the chicken thighs with chicken stock, light soy sauce, and salt & pepper
for around 5 minute place the chicken in a fry pan on high heat, fry with oil untill crispy cooked then set aside.

heat the oil and stir in the onion, garlic and Naga Morich Peppers.

then add the bell peppers and cucumber.

next the oyster sauce 2 tbs , tomato sauce 3 tbs, soy sauce 2-3 tsp , white wine vinigar 1 table spoon,
sugar 2 tsp, 1/4 cup of of chicken stock or water. taste.
finally stir in the mango , tomato and spring onion.

Pepper Mango Madness

A fantastic fruity sweet n sour taste with the added fire of Naga Morich

The Ingredients;

Coriander
Thai Basl
Cucumber
Spring onion
Red onion
Garlic

Soy sauce

JungleRain, EXCELLENT! Sweet and sour, that's a GREAT entree!

I thought we'd have similar dishes, but I'm glad they are different enough to make this a great challenge. And is this really only your 2nd TD??? WOW! Never would have known as you did a wonderful job with the pics and presentation.
