Semi-dried Aji Amarillo?

I had a bunch of these Aji Amarillo which I brought in to ripen. Unfortunately, the grow season ended before the harvest!!

The plan was to pickle the fruits to use as an accompaniment to breaded chicken burgers in a bun.

Problem - the chillies are now partially dried... So, what can I do with them?

You can add them to vinegar to pickle - they will rehydrate in the brine.  You can also dehydrate fully and grind to powder.  A little powder in your breading mix for the chicken burgers would be swell.  :)

i would sauce and add the water you think theyve lost back in 20-30% whatever you think it is. thats what i did and it worked out fine.

You can saute' a few in a small amount of some nice oil of choice and they will reconstitue themselves.   Do this to start, say, a stir fry dish with meat/veggies added afterwards to the nicely flavored oil.

Again, dry peppers will reconstitute when addied to liquids, such as soups or stews, and will yield a very nice flavor to the dish.
