Serrano Hot Sauce Recipe

  • 1 pound serranos
  • 1 large carrot
  • 1 large onion
  • 1 head garlic
  • 1 cup water (to simmer carrots and onions)
  • 1 1/4 cup white distilled vinegar (can use apple cider but covers up the roasted flavor)
  • 2 tsp salt
  • 3 tsp sugar
Roast serranos, carrots, onions, and garlic on the grill or in the oven until slightly blackened.  Pull them off the heat and then sweat them (covered pan, aluminum foil, etc) 10-15 minutes until the skins peel off easily.  Chop up the carrots, onions, and garlic and throw them in a large sauce pan with some of the water.  Simmer them until soft and then add the peppers, salt, and sugar.  Cook an additional 15-20 minutes then blend to desired consistency.   Add the vinegar and bring it to a gentle boil for 5 minutes.  Pour into hot bottles. cap, and invert for at least 5 minutes.
 
Green serranos make a very tasty roasted hot sauce.  I actually like them better for this than jalapenos.
