In my search to learn about how to balance flavors, I came across a recipe that is really tasty. I was in the garden and I found a branch on a habanero plant that was split and the leaves were wilting. It had 10 pods on it. Perfect for my version of the sauce I just read about.
5-10 hot green chilies (I used the habs)
2cloves garlic
2T fish sauce (I used soy sauce)
2T fresh lime juice
Mince and stir together.
Now start adding sugar, 1/2 teaspoon at a time. be sure to stir until the sugar is dissolved. Taste. Each flavor should start to become more distinct and "lively".
Continue to add sugar, 1/2 t at a time, (again dissolve and stir well with each addition) just until you can start to taste sweet as the predominant flavor.
At this point the sauce will be balanced and very tasty. You can continue to add sweetness if thats the profile you want and also spices if you want.
A simple "go to" fresh sauce.
