If you want just a little bit of smoke try this method first, get fresh oysters in the shell and shuck them, leave them on the 1/2 shell and smoke them that way. That is probably my favorite way to do them outside of raw or frying other than roasting them on the grill in the shell under a wet burlap sack :)
