Is there a master list somewhere of all the relevant, professional and honest food critics, sauce reviewers and bloggers?
So where can I find a who's who of current, honest and professional sauce reviewers and bloggers?

there's tons of reviewers, you need to look at their past reviews to see if that's the style of review you want. Some will post everythign they try, some will edit out what they don't like, some will do test batch reviews for the processor only.
As for a complete list, not that I know of and some people come and go from the review game.
If you want a list of names, let me know, I'm sure between Scott and I we can get you at least a dozen. Again, it would be up to you if the reviewer is credible or not.

You know if I was wanting to introduce a product like a sauce I would just take a sample from this website's members. Mail out 50 or 100 samples. Id really like to have my own Ghost Pepper sauce one day. Mainly for friends and family, but if I wanted to sell it there are so many out there how do you stand out from the rest?

My main issue with the FIre Breathing Idiot is how stupidly he edits things. The voice changes sound bad, the repeated sections make him sound like a broken record and the visual distortions are nothing but offputting. Seems like his videos are made by idiots for idiots.
For all I know, the reviews could be some of the most reliable out there but the presentation simply doesn't work for me in the slightest. Or, by the sounds of it, for you.

A few questions to think about:
Who is your target audience for the product?
A lot of people who would be "big names" in the hot sauce community have MUCH MUCH different pallets than the average consumer. Do you want to have a hot BBQ sauce or a mild hot sauce reviewed? You'll need to find a source that reviews food items for the masses. If you are wanting recognition in the super hot niche market, maybe these guys are the ones for you
Do you want the review to make product better, or for marketing?
Marketing wise, you'll reach the most people with big magazine reviews. Send samples to Bon Appetit, Saveur, Food and Wine, etc...
For better products, there are a wealth of people on this forum with bona-fide good pallets, start slamming out 1.7oz woozy samples

Be sure to do your due diligence and read prior reviews if you are looking to get a published review. Like salsalady said, some reviewers will publish good or bad, which means you could really be rolling the dice on a bad review when you are growing your business.
Side note: Took a look at your website and branding, and I think you have some really good things going from a visual perspective. A ton of sauce companies go very over the top and cartoonish, yours is professional and clean cut.
