Working on quick breads with which I can make sandwiches. This I want to record so I remember how to make it.
The bread I suppose is a mini-johnny-cake, as its a sweet cornbread made in a mini-skillet, and celestified.
The sammich is two johnny-cakes, a lettuce leaf, 3 slices double-smoked bacon, guacamole, and wasabi mustard.

Johnny-cakes, celestified
1/2 cup all purpose flour (mine's gluten free)
1/2 cup corn meal
2tbsp brown sugar
1 tbsp baking powder
1 tbsp Egg replacer or 1 egg (add the real egg with the liquid ingredients)
1/2 tsp salt
Spices to taste:
Cinnamon
nutmeg
allspice
Aji limon pepper powder
mix all the above and add:
1/2 cup milk (less the volume of the egg, if you used a real one, and mine is soymilk)
3 tbsp oil (mines grapeseed)
cook in hot oiled pan until well browned, flip, cook on other side. makes 4 mini cakes.
Sweet and savory, hot and cool. perfectly balanced.
