food STEAK!!

Was steak night for i. Strip was on sale. Not a favorite, but for 9 beans, was worth it.

I could never bring myself to cooking steak any other way besides grilled. I was lazy and didn't feel like setting up the grill, so I cooked it in a pan for the first time. Pretty damn good!

Dusted with some seasonings, and home grown cayenne powder

grilled strip steak tonight    I wanted to try presalting.. overnight with coarse salt. It worked well but I will have to dial in the exact amount needed as my wife found it slightly salty. 
 
On my steak I added a spice mix of black and white peppercorns, dehydrated garlic, coriander seeds, dill seed,  and a smoke dried scotch bonnet

I only ended up eating half with some ceasar salad and butternut squash mashed with butter and maple syrup

I found my favorite little steaks at the store again.  Marinated over night in a couple of sauces.  A local vidalia onion peach jalapeno and red chile sauce for sweetness, and Puckerbutt's Pineapple Ginger sauce.  Not sure what peppers are in there, but it is a ripper.  I then patted it dry and put my rub on it. Cranked the grill and seared em to rare/medium rare.   The marinade is killer, the sweet fruitiness is there, then the saltiness and spice of the rub, then the blazing heat from Puckerbutts builds and builds.  Perfect combination.
