end of the year and is not able to help you out with your event. It sounds

Hey guys...you talkin' about roasting a pig...back in the 70s we would get about a 200 lb hog cleaned and split down the middle...probably 120 lbs meat...we had two 1 1/4" pipe frames that were 5' square...the frames had 2 foot pipe handles on each corner...we would lay the halves of the hog on one of the frames and wire the other frame on top of it...then we would wire the handles together....

the night before we would dig a hole in the ground 5 feet square and 2 feet deep and start the fire to make coals...we only used pecan wood for the fire....

the next morning after the hog was framed and ready for the fire, we would place the frame over the fire...the frame set on 4 cinder blocks, one at each corner...a separate fire was built that was kept burning for additional coals when needed...

cooking time...12 hours...turned every 30 minutes and basted in the cheapest beer you could find...

absolutely delicious and it makes a great thing to do for an overnight party....or should I say drunk...just don't fall in the fire...

Yeah that's just the name for a foot of a pig or sheep especially if it's prepared for food, honestly it's true.
 
When I lived on a property about 20 yrs ago we built a basic spit and used a windshield wiper motor from a Land Rover, 2 motorcycle chains & a child size bicycle rim on the shaft to slow the rotation.
i think we went through 2 car batteries for the day/night....but my memory is a little hazy of that party lol

I remember seeing pig's feet being served as a meal in Hitchcock's "Frenzy" - I never thought ANYONE would actually eat that!

I hve eaten pickled Pigs feet AND pig Knuckles...the flavor is like a pickled sausage and really good...you just have to get over what you are actually eating...

could be worse...i had a scottish great gran who would pass out tinned ox tongue for xmas prezzies.....& a good dose of last years calendars too :lol:
 
I've started my training for the big event, adding the hottest sauces and pods that I have to all meals, barring cereal. Sadly, I'm gonna run out of supplies by thursday. ;)

I'm making a batch of jerky, so hopefully there'll be some left for Sunday.
