Gettin' drizzzzunk on 5 beans and shredding some pork carnitas for quesadillas later. I made some more of GIP's TD soup. I can't get enough of that stuff....it's hands down one of my favorite recipes. I wish I had some fresh rocotos to slice up and add them to the bowls later.

I really enjoy that soup, too bad i did not freeze more roasted hatch chiles , the addition of a few roasted manzanos kicks the heat up a bit more than the wife likes, but i luv it

Dude it's incredible!!
 
I don't have any hatch chiles here so I use equal parts poblano and Anaheim.  The Anaheim get sooooo deliciously sweet when roasted.

It's arugula.

The Sammie has turkey, avocado, arugula, and mozzarella cheese. Put it on the panini I press and you're good to go. Really good and really fast.
