The first cook I did I noticed that when I went to add more charcoal all of the small lump had burned away and there was nothing but big pieces that weren't even smoldering.

I Texas crutched them anyways. Now I feel kind of terrible for deviating from my purist ways. The ribs are done and resting now.

The bark isn't crunchy anymore.

Actually the egg is a great que. My grandfather had one of the original ones and it was eventually willed to me. Unfortunately the ceramic broke and the steel underneath was badly corroded.

That thing coooked the best chicken I've ever eaten.
