First picture is in a mixing bowl, soaked breadcrumbs in milk with spice on the side then added back and mixed.

I always liked some good bread, cubed, and mixed in better than crumb... TC, I have a feeling you know some people that do that...

Yes. I will not make them with breadcrumbs. I like the texture better with bread. Just a personal preference.
