Wound up with some Coopers BBQ brisket (point cut) and pinto beans a couple of days ago, so I decided to make a big a** Frito pie. I also added some of the jalapeño sausage I had leftover

Havent had time to post lately, we are trying to finish moving into the new place out in the sticks . Add to that the crazy amount of rain we have been getting here in the Hill Country and it results in us eating a lot of oven cooked frozen food and local dinner food.

But tonight, after being home all day due to crazy flooding all around us, I had the time to try something new.

Jalapeño popper chicken breasts.

What the hell, its got to be better than Red Baron pizzas. Plated picks with homemade mexican rice to come....

Our daughter started her new school this week and was telling by me about the snack bar options they have. It made me think way back into the early 90s when I hit jr. high and got a snack bar to choose from. One of my favorite picks was the loaded baked potato. It was a baked potato with nacho cheese, crappy ground beef chili and pickled jalapeños. So I recreated that today with a copycat version of my Stepdads chili, homemade pickled jalapeños, canned nacho cheese and a big ass baked potato.

My wife was so skeptical that she made her own supper.

Then she saw the monstrosity that was on my plate.

Then she dug in and ate almost half of it.

Thank you. I cook what I grew up eating, direct German immigrant Texas food.... in addition to all the other food that my family has come to enjoy here in Texas. My Grandpa would order an enchilada plate any chance he got at a home cooked TexMex restaurant, but my Granny wouldnt eat Mexican food to save her life. Shed rather eat sausage and sauerkraut. Ive embraced both ends of those spectrums and more.
