For Christmas every year I take my parents food. All fresh frozen, they are in their 80's and don't cook much any more. Meatballs, marinara, lasagna. Chicken soup, beef stew etc. My father loves my "cheaters chili". Ground beef, tomatoes, beans etc. He wants it Hot but not spicy, or Spicy but not hot depending when you talk to him.
Made a big pot of "dad's chili' last weekend. Going to have a minor surgery over thanksgiving so can't cook then. Have been eating the lame chili for four days. So now a quesidilla
Made food.

GIP, I woulda folded that and eaten it like a taco.
That is some of my favorite grubs. I love taking leftover meat and some peppers and cheese and making quesadillas. I top with some sour cream and hot sauce and a little fresh pico de gallo and I jam it straight into my facehole!
I got the closest to beer-drunk I've even beer yesterday ...

This thread inspired me. I am eating quesadillas with leftover Asian pork tenderloin chops, red jalapenos, monterey jack and colby jack cheeses, sour cream, Old Grumpy Mark's Black Label and Cajohn's El Segadora taco hot sauces, and some fresh pico de gallo.
