Oh and I think you know the list of ingredients.  Flour, water, yeast, tomato basil sauce I made, mozza, parmesan, cheddar, pepperoni on one, mushrooms on the other.  Hot sauce added to slices as I ate them.  Oh and oregano kimosabe.  Now go make me a taco!

I would totally let JayT into my home ... and I'd be sure to kick it on the couch at least one of the nights while he threw down ...

I made ghetto/urban tacos tonight with leftover  80/20 chuck.
 
Ancho chile lime powder, cayenne, leftover super thin sliced onions.
 
Flour torts, tilly shredded scheeze, lime squeezin's n' pleazins.

When I saw this in the game thread I was super impressed ... as I've tried a couple of times to make a 'pie' like this, and i've *ALWAYS* had an uneven cook ...
 
Very curious about the details of how you cooked it, personally ...

Nothing special.  Just brushed with melted butter and a some ice cubes in the oven near the end on a good stone.

On the bottom of oven for steam. 
 
 
Crust....it's more of a chewy bread stick recipe
 
1 cup plus 2 Tbs     warm water
2 Tbs                      olive oil
3 Tbs                      grated Parmesan
1 to 2 Tbs               brown sugar or white
1 1/2 tsp                 salt or less                              
3 cups                    1/2 whole wheat 1/2 flour
2 tsp                       yeast
garlic                      to your taste
Herbs                     I always have basil, thyme, oregano and parsley...sometimes sage
 
I only measure water, flour and yeast.  I got a Zo from goodwill about 6 years ago for 6 bucks.  Much easier to mix and clean IMO.  I put it on dough cycle for 45 min which mixes and gives first rise. 
 
I was out of freezer pizza sauce so it was store bought. 
 
Filling
 
Browned venison italian sausage, onions, garlic and peppers (when I got them).  More herbs.  Frozen crumbled broccoli leaves at the end for some vitamins and fiber.  Chard or spinach can be used....depends on what's in the freezer.  
 
Roll out the bottom.  Sprinkle corn meal on stone.  Spread the sauce, add filling and cheese.  Roll out and place the top.  Pinch it up.  Brush with melted butter.  I give this a good 30 min rise...it depends on temp but I like close to double.  350 for 18 to 25 minutes.  I set the timer for 15.  Throw some ice cubes in the bottom of oven for steam to help brown and seal the top.  Check it again until the color is good.

I think I get it ... as opposed to having a pool below, you are throwing cubes onto pre-heated pan to make instant steam? ...
 
No one posts pizza anymore.  Here's one I think they call grandma pizza.
