The Pescetarian

Hey y'all,
 
Not too long ago I had an epiphany. Except for a craving for a cheeseburger now and then I really don't eat meat. It's not that I don't like the taste of bacon, pork chops, chicken, brisket, et.al. I do, but I find myself eating a more healthy balanced diet of veggie's and seafood.

I reckon it really started for me a few years ago. Went to the doctor for a checkup and it was revealed my blood pressure was too high, my cholesterol was too high, and I was carrying around way too much weight for my size. The witchdoctor was only interested in pedaling his drugs to me and engaging me for repeated and often visits to the waiting room. Screw that.
 
I then made the decision to lose the weight and at the same time get my cholesterol in line along with lowering my blood pressure without spending the rest of my life on drugs. How did I do it?
 
Easy. I quit eating the stuff that I really didn't need. I cut out the sugar, lowered the amount of salt I used, quit eating eggs, bacon, deep fried foods, meats of all kind, anything in a box or a can, and all processed food crap. My cholesterol and blood pressure dropped like a rock and the weight fell right off. It was enlightening to say the least and I did it without having to take a bunch of damn drugs. 
 
The other day I made a bunch of meatballs for the Sandwich of the Month Thread. After I made the meatball sammich I asked myself why I did that. I don't know. I don't crave meat. I didn't even think it tasted all that good. I mean it did taste good but it wasn't anything I'd go out of my way to eat again. So why bother anymore?
 
So it got me thinkin' about what I eat most on an everyday basis. I love tacos but it occurred to me that I mostly load my tortillas up with onions, garlic, chiles, shrimp or fish, or just whatever veg I have laying around. Cabbage? You bet. Goes great on a taco. Why not?  These days I also find myself looking at labels. Yellow dye #5? Get outta' town. Why is that sheeit even necessary?
 
So this thread is going to be dedicated to all 'thangs more or less healthy. A pescetarian lifestyle if you will, because that is what I am. 
 
Y'all got some hippy healthy food stuff to posty up? Well this is the place to do it. Quinoa? Whole wheat bread? Sprouts? Bring it all. But bring the heat too!

Made up some coleslaw with shredded cabbage, cilantro, chopped chile's (look like thai's but who knows), just a little sea salt, olive oil based mayo and Mae Ploy sweet chile sauce.
 

 
I picked up a little Lodge cast iron griddle that fits perfectly on my Lodge Hibachi grill. Why? Because I like fire! But I don't really care for all the spooky stuff emitted from wood fire or charcoal.
The griddle 'thang just works and its just dang cute too.
 

 
A little squirt of canola oil was all that was needed.
 

 
Just look at 'em! Juicy, sweet, and tender shrimps. (Note the just made hot sauce, that's for another thread)
 

 
I will say that I've always had an addiction to cheese and I find it difficult to not put it on taco's. So we got a corn tortilla with a little shredded cheddar, the coleslaw, and the shrimps. Before eating I splooged the just made mango hab sauce all over it.

That cotoletta thing is strange. I nearly like better cheap market one than artisan made. Maybe i've never had a proper artisan one...

I think most milanesa is made with an egg batter/bread crumb dredge as are most Euro style schnitzels. In Texas what we call here CFS or chicken fried steak, is a Texas favorite and heavily influenced by German and Czech immigrants.
 
Almost always a milk/flour dredge although sometimes egg & milk/flour dredge. Gravy is usually milk, butter, flour, salt and pepper. 
 
In Texas CFS is ever where but can be tough to find a really good one. Every one I've had using egg, the coating fell off. 
 
Where most joints fail though is not the breading but the gravy. Either too thin or thick like glue or not enough pepper or just lacking salt. I don't understand how something so simple could get messed up like that.
 
Texas has heaps of great food joints but also more than heaps of crappy ones too.
 
As for my fish CFS, I just had to do it.
 
And I LOVE IT!
 
Good by itself but also DEFCON 2 made it KILLER!

DId you use a bamboo mat to roll them?

If you want the real deal mayo, buy Kewpie mayo. It's what they use, and has rice wine vinegar and MSG. It's not as eggy, or thick.
 
TB you were correct, it would be Chicken Fried Steelhead, and I would mouthfist all of it in record time. 
 
Lots of good sushi pron on here lately, has me craving it.  All I have is crappy food.  Guess I will have to visit that thread next.

Wonder how that would have tasted with some bleu cheese dressing mixed with shredded carrots and cabbage (like a slaw, but also to mimic the bleu cheese, carrots, and celery).
 
I love how you turned the tortillas into crackers but said you don't like limp tortillas... lol. Nice save.

I do something similar for buffalo chicken sandwiches. Basically chicken breasts done in the slow cooker with wing sauce and shredded, then put on a bun and topped with bleu cheese slaw. It's like a buffalo chicken version of a pulled pork sandwich. Super easy and tasty.
 
Salmon & steelhead can pair well with cheese just fine but blue cheese I reckon is a stretch. 
 
BC over powers it and I think all you would taste would be the wing sauce and BC.

Think of it as cracker style crust for pizza which is the only style I make any more.

yeahhh i use bamboo mat to roll!! look to the bag of rice.
The crab is not now crab, is very expensive here! i dont know what is surimi...

I never see Kwepie mayo to sell here!! i never eat it! 
this in my fist experience, so i dont buy expensive itens...

CFS Part Duh!
 
Jalapeno Ranch and flour dredge.
 
Normally with CFS it would go flour/milk/flour for the breading but with a thicker wet wash like the ranch and then flour it comes out pretty gall dern guud!
 
If fried in good oil and at the right temp, it comes out nice and crispy and the breading WILL NOT FALL OFF!
 

 
Old school style CFS although I do love my recessed comal for frying.

Made up a little kale salad with the last of the 'peno ranch to go with the fish and splooged on just a little lime crema.
 

 
I've decided I like kale like this. Reminds me of thick romaine leaves but tastes sorta like broccoli. 
 
And the CFS? It's like dadgum crack I tell ya' but I need to whoa up on the frying for a while. Had my quota for the month.
 
There is one downside.
 
I'm outta' DEFCON 2 now.
 
I'll have to drive an hour each way to Plano to stock up.
 
Or maybe just order online and save the gas, which is probably smarter since the joint I have to hit up for the stuff is Central Market. CM is the kind of joint you roll up into to fetch a 4 dollah item and walk out with $300 worth of sheeit in the cart. It's all cool and the gang though. They got hot Texas hippy womern's workin' there. BONUS!

Reason I mentioned is that's more Buffalo style than CFS style. Battered, deep fried, coated in wing sauce. A light blue cheese slaw could be bangin'. Light on the bleu. Instead of ranch. But I know how you Texans like your ranch. Probably with wings too.

Just tomatoes, parsley, salt, mozz, evo oil and hot powder...
That's my dinner with a piece of bread... The burger from lunch while not a challenge to eat left me with not much hunger...
Not bad to tell the truth since tomatoes were good.
 
Ah ha :D, btw never tried fried tomato. That could be new frontier!:D
(btw. pick a good slice of roasted bread and above stuff is very good!).
