Made a mesquite paella this weekend. Mexican style, which means it has everything in it and would be sacrilege in Spain.

I almost hate to even post anything after that masterpiece, but I will anyway.  Color contrast is quite awful on this for the photo, but it sure was good.  Mahi Mahi with roasted cauliflower and wild rice.

It was G.  I roasted it a little long for my taste, but everyone else liked it.  I seasoned it with sea salt, coriander, garlic powder, cilantro, red pepper, and lemon juice. 
 
Pimped a lane snapper last night.
 

 
Hit it with chopped cilantro, garlic, kosher salt, fresh cracked black pepper, a tiny pinch of fatalli powder, and olive oil.
 

 
Comal'd corn tore tillah's, fine shredded cabbage and wang sauce. I put that sheeit on ever 'thang.

Too bad I only see this snapper once in a while. I reckon I like to be liking it more than grouper and its definitely better than pacific cod.
 
I should move to Tampa or SoFlo and get the good stuff anytime I want. Catchin' my own would be mo' betta'.

I hear some folks in the south like Georgia clay.
 
Cod's pretty good right off the boat else wise it can be pretty meh and even dry.
 
I'd even take Alaskan pollock over cod any day.
 
And halibut? Fuhgetaboutit.
 
Round here it goes for $20 a pound or more so it gets the finger.
 
Every great once in a while I see redfish come around but even that commands halibut pricing.

PNW Ling Cod & Rock Cod rule. Halibut is my #1 whitefish tho. And I am talking about COLD water PNW caught. My mother ruined me on Snapper. She made a foil tray, sprinkled feesh with S&P and lemon slices then baked it for an eternity. Chewy, nasty, tart chewy whitefish. And it stunk up the house like a minus tide on 100° day. I bet the way you make it is way better tho TB. I'd hit it. And that's a ridiculous amount of $$$ to pay for Halibut. Booo.
 
Halibut rocks PERIOD.  Joyner how do you feel about Rockfish aka Striped Bass?  I myself love it long time.

I slay them and eat them raw or cooked. My white fish go something like this...
 
Wahoo, Halibut, Mahi are in my top 3. I have access to tons of fresh fish at certain times but not as much as I wish I did or used to living in the Outer Banks. I have had COD fresh off the boat and beer battered and fried is fine but I have about 30 other fish I prefer. 
 
Striper has a much better flavor than halibut. White Sea Bass is also great ! I catch these off the California Coast all the time and in the SF Bay.

Depends on the chef ;) Striper/Rock fish is my #4 and we get it as fresh as you can here on the east coast. Also it is personal preference I suppose with anything.

That is a great top 3. What I meant is that halibut is more bland compared to striper or seabass which have a great taste all by themselves. JMHO FWIW.
