Buy costco rotisserie chicken, eat all you want and put the rest of the meat aside. Get celery, onions and carrots in a stock pot and char them, add 4 quarts of water and the rotisserie carcass and bring to boil, reduce to simmer until about 1/2 reduced. Salt and pepper to taste.

Cook spaghetti in a separate pot, once done add some pasta to a bowl then ladle in the broth and enjoy.

Try the frozen Reames egg noodles aka Kluski noodles. Dried Kluski are ok too. I wont use anything else for chicken noodle soup anymore. Everything else is great although i use white pepper and the "greens" from the celery too. Chopped up like parsley.

Costco bone broth is also great if you are in a hurry. They just started carrying one with super low sodium and nothing else added.

This stuff rocks and its nothing but bone broth.

I buy 2 boxes every time im at Costco cause they only get 1 pallet at a time and it sells out fast. Its only slightly cheaper than Kitchen Basics but i like it MUCH better. Kitchen Basics (no salt added) has other veggies and seasonings.

Really hard to beat those rotisserie chicken too. Look for the leg quarters they sell from the left overs. Excellent cheap chicken for a huge variety of uses. Big pan of them is like $5.

No, it is meatless but the broth was made from pork necks. I have made vegetarian and it is not complex or rich enough for me at the broth level.

Looks great! No such thing as vegan pho, the broth is the essence of the dish. Vietnamese soup it would be.

So I need to trade my wife in? Not sure what the return policy on that is...

I used to use only Pacific Stock, Organic, but for some reason its almost non exsistant here now. Cosco used to carry it and I would buy the 6 packs.

This is why i dont use many of the stocks or bone broths such as the Pacific.
