The Wedding Sauce

My oldest daughter is getting married in August. I was asked to design and develop a hot sauce, with them in mind, that would be a take home for everyone that comes to the wedding. So I got the thinking about RocketGirl1 and asked a lot of question about her intended. Put all that information into the RMSSHSA, that's the RocketMan Super Secret Algorithm, and this is the resulting recipe.

The Players

Guava Paste
Blackberries
Raspberries
Pears
Fresnos
Jalapeños
Sweet onion
Tamarind Paste
Molasses
Lemongrass

This is going to be a 3 Gallon batch so to start

This is a 5 gallon Brew Bucket full of No Rinse Sanatizer. I prefer Idophor.

And after running everything through the Food Processor

I went 6% salt for this batch and used Whey from some Greek Yogurt to kick it off. Going to let it run for as much of 90 days as I can and process.

Finally in its resting place on top of the fridge.

Never thought that finding a graphic of a heart made from peppers that will let me make the background transparent. Ok, I found a couple but they still have some white from the background left around the peppers and it messes up using it as a frame for Kris and Antonio's picture. Guess I may be heading to the store to try and find some peppers that will work.

Maybe include "Thank you for celebrating with us.  Aug 8, 2014" on the left panel.

Good idea SL, I have all the raw pictures and such in a PowerPoint presentation. If you have Office 2007 or newer you'll be able to access it all and can ungroup all the stuff grouped together and work with the individual parts. PM me an email and I'll send it to you.

what are you using for label stock?  1-up sheets and cut to size or a precut Avery something?

Man I am too late to the party... was gonna say I have some graphic design background and, seeing as how I literally just signed the contract for my wedding venue, I was in an even more helpful mood.  Looks good though!
