The Wedding Sauce

My oldest daughter is getting married in August. I was asked to design and develop a hot sauce, with them in mind, that would be a take home for everyone that comes to the wedding. So I got the thinking about RocketGirl1 and asked a lot of question about her intended. Put all that information into the RMSSHSA, that's the RocketMan Super Secret Algorithm, and this is the resulting recipe.

*** Major props to SalsaLady and Lucky Dog Hot Sauce for spending some major time going through and helping to refine it. They are 2 of the reasons this is such a great community and if you haven't tried any of Thur products yet, well that's just wrong! Ok, shameless plug over :)

Guava Paste
Blackberries
Raspberries
Pears
Fresnos
Jalapeños
Sweet onion
Tamarind Paste
Molasses
Lemongrass

This is going to be a 3 Gallon batch so to start

This is a 5 gallon Brew Bucket full of No Rinse Sanatizer. I prefer Idophor.

And after running everything through the Food Processor

I went 6% salt for this batch and used Whey from some Greek Yogurt to kick it off. Going to let it run for as much of 90 days as I can and process.

Finally in its resting place on top of the fridge.
