Home made unagi roll end pieces, soba tossed in sesame oil & dusted with black sesame seeds, and blistered shishitos. Wasabe and soy sauce to dunk in, of course.

I love it too, man! It's a great roll to make for a pregnant woman badly craving sushi, who can't eat anything raw right now.
 
While prepping some seco de cordero, I took these two lamb loins, separated the chops from the belly, and saved the bellies to make lamb bacon.

I rubbed the bellies down with a paste of salt, brown sugar, and pequin infused raw honey. I'm going to cure the bellies for 5 days in my fridge, smoke them with apple wood, then slice them to fry up for some scrumptious lamb bacon
