food Throwdown a Pumpkin

dragonfire's actually sounded awesome to me it just needed some better presentation, like, something to dip in it etc.... I was all about that cheesy pumpkin dip... but the presentation didn't do it justice.

Since I was longing for some roti to eat the leftovers,did a big production &made some dhalpuri roti and added some mango kuchela..it went down great...if I can say it was so good & oh well now  I'm stuffed...
 
{Fyi...dhalpuri roti is made of dough stuffed with boiled split peas  which is ground finely  in a food processor  with onions/garlic/peppers added  and
a bit of tumeric,roasted ground cumin added to the mix...the peas should be at the soft ,but not mushy...the mix is then stuffed in the dough & cooked
on a griddle..with oil coated on  both sides.. Mango Kuchela is a Trinidadian condiment which adds spark to Indian food..you should try it.} ;)
Here's  a photo I took of one being cooked on the griddle just a short while ago..Love that Trini food.

I have these giant candy roaster squash I grew and was wanting to turn them into a bunch of bitchin pies but have no idea how to process the squash to perform this function ie the puree.. Any thoughts? Also in regard to additional ingredients like cream cheese or anything?

The best way I know is to cook it however you prefer, (steam, simmer, oven roast etc)

Once cooked and cooled, run it through the finest plate on a food mill.

A decent food mill is a good investment for any serious cook.

I make Butternut squash pies that are better than any canned pumpkin puree pies.

If I can get ahold of honeynut squash I am going to give some pies a whirl.
