Time to put a hurtin on my co-workers

    Been away from THP for a small vacation from all things Dirt.It is time to get locked and loaded for a run at 2015.I am starting with a basic sauce to give to my family and friends.This batch made 100 oz.I promised myself that all my recipes from here on out WILL BE WEIGHED and or properly documented so I can duplicate if needed.
    All the items below are food processed  individually,then weighed before going in the first cook down.
   32 gr fresh ginger
   413 gr red onion
   100 gr fresh garlic
   282 gr choco ghost peppers
   1112 gr reaper peppers
 
 To the above, add below items and start cooking(i went 2 hours on a medium to low simmer)
 1 cup apple cider vinegar
 2cups vegi juice
 
 the items below get added to the cooked stuff 
   1tbs sea salt
   1tbs maple syrup
   1tbls honey
1/2tbs cummin
1tbs ground mustard
1tbslemon juice
1 tbs fresh ground red moruga powder(i dont think it needs it,but i cant wait to see the results from those friends that thought a couple of my batches last year were not as hot as they were expecting)
 
1 cup balsamic vinegar
 
i split the stuff into 3 batches to go back thru the food processor.To each run i put 1/3 a teaspoon Xanthum gum from the top.And i blended the crap ,out of it.5min per run.
 
get it all back together and reheat back up to over 180 for 30 min.
I put them in 4oz jars.So do your normal waterbath stuff.
   This is as hot as I will be ever making,it is not a chip dip.lol Now that I have my F5 I can work my way back down the ladder on milder sauces with tighter recipes.

Fan on my back porch could not keep up.it was 3 outside and not far from it were i cooked.The steam coming off the pot was as bad as i ever been around.The heat-cold steam effect was a recipe for disaster when you include super hot pepper oil into the air.I had to hold my breath,run onto the porch,stir and get the hell out of there.I was wearing a mask and it was of little use.

Looks very nice Randy!  Good on you for weighing the ingredients, because a great recipe is only truly great if you can duplicate it.  Also really dig the tornado/pepper w eyes logo and 'F5' heat indicator.  That sauce will certainly drive the cold from your bones!
 
    Thanks guys for all your kind words.I am still a work in progress.I made a few changes to how I want to approach this year.Including making the most out of what is left of the 2014 Harvest.
   I wanted to grow the reapers last year,only got 3-5 pounds with 3 plants.They did not make the list for 2015.They will be replaced with one of my heavy producing 7-pots or red morugas. Very disapointed I did not get more reapers.I planned all year to roll out that F5 on my friends,Only ended up with 25 4oz jars.They were gone in a couple days.I may have a couple held back. ;)
