fermenting To ferment or not....

Greetings and salutations!
I've read bunches of recipes online and the sauce making 101 here along with many posts on fermenting. My question is: for a first time sauce is it preferable to ferment or not? Now for the 5 point bonus essay question: How does fermentation affect the flavor of a sauce compared to an unfermented version?

If you read the sauce making and fermenting posts then you already have your answer.
 
It's a personal preference IMO.
Do you like Tabasco or Sriracha? They are fermented. So are most if not all commercial sauces.
 
A non-fermented or fresh sauce is delicious with all the flavors up front
A fermented sauce has layers of flavor that may take several servings to discover.
 
Some people have a preference, I like them all :dance:
 
Thanks for response. As a former chef, I'm not intimidated by any of the extra steps involved with the fermenting. I've been doing that with beer for over twenty years! But I never got involved with fermented foods. I've got plenty of experience with hundreds of varieties of hot sauces (a friend in PA owned a store) but I've obviously never tasted a fresh one. I was unaware that most commercial brands are fermented which is where my questions stemmed from. Since I have about 30 plants growing, I think I will try both at the same time....and some jelly, too, because why not. Thanks again!
(And where do I find those dancing pepper emoticons? LOL)
