Tomatillo Recipe

I did a search on Tomatillo looking for a recipe.  Didn't pull up a lot.  I have just under a pound and would like to make something just to give these a try as I am growing them for the first time this summer.

A sauce of some kind would be nice.  No fresh tomatoes, so a salsa is not going to work.  Just want to get an idea of how these taste.  I tried one last night to see how it enhances a recipe and didn't get a lot out of them.  Now I am looking for a recipe where they are the dominate flavor.

I like to char them with some onion and garlic and anaheim peppers then throw everything in a blender.  Add some salt, lime juice and a touch of cilantro and you've got your very own salsa verde.  Note: you can roast them in a 325 degree oven if its not grilling weather.   :)

Recipe is like:

1lb tomatillos
1/2 lb onion
1/2 lb anaheims (or other peppers)
4-8 cloves of garlic
1 tsp salt
juice of 1-2 limes
1 tb chopped fresh cilantro

Roast everything.  Peel the peppers.  Put tomatillos, onions, peppers and garlic in a blender.  Add the salt, juice and cilantro, give one final pulse in the blender.

Great over enchiladas or tacos or nachos.  If none of those are available it's just as good on fingers :D

They have  a tangy "green"  or slightly sour taste to them.  "Salsa verde cruda" is just raw tomatillos, celantro, serrano and celantro fine chopped...fantastic on chicken and grilled fish.  I use them in caldo en pollo. (chicken soup)  just cut them in half toss in the crock pot with celery, onions, carrots, a can of tomato's and chicken....
