Turning bhut jolokia powder into sauce.

I've found a lot of topics about making sauce from peppers, but I can't seem to find any on turning powder into sauce. I have an ounce of bhut jolokia powder I wanna turn into a small batch of bhut jolokia hot sauce. I really like citrus based sauces. Flavor wise, I mean. I want to make a bhut jolokia sauce from this powder that will have a strong citrus flavor to compliment the bhut heat. Any ideas? I have 0 experience making sauces!
 
Well, do you want to make the entire sauce yourself? Because I still havnetgotten my own pods from my plants so instead of making my own sauce, i mixed hab powder into franks red hot and it was delicious lol.... Just added pure heat..

Bhut's sometimes have a smoky flavor to them. Take a little taste of the powder and also smell it to get an idea of the powder's flavor profile. It can probably stand up to some strong/bold flavors.

You can pretty much just pick a recipe that sounds good and add the powder to it. It will be thicker than the original recipe, but you can add a little liquid, juice, vinegar, water, whatever, to maintain a consistency you like.

+1 to Salsa Lady, you need to get an idea of the flavor of the powder then you can combine it to the flavors of the Citrus you want to add. Before I start making sauce I try to get my flavor profile as pinned down as I can. Get the base pepper ingredients flavor and scent, smell is a big part of taste, into your mind then imagine adding the flavor or Orange, Sour Orange, Pineapple etc... to it. Then get try to combine those flavors together in your head. Till you think your close to the flavor profile you want. Next if you want a thicker sauce you need t bring something like Carrots or Sweet Potatoes into the blend. Or you could use something like Xanthan Gum for less impact on the flavor profile. Once you have everything pinned down make a small sample sauce. Give it a taste after making it but dont judge it till it's had a week or 2 for the flavors to meld and get all happy together. JMHO.

The only issue there is pods are all sizes and weights. My Giant Jalapenos only take one or two but might take 30 or 40 white habaneros.

Whoops! Forgot to specify I'm talking about "average" size peppers. Just made some powder from about 3 SFRB's of mixed hots and supers. Pods were "average" size, smaller than a golf ball, for the most part.

I've read elsewhere that a Lb. works out to about an oz. of dried if that helps.

That actually does get me closer to the answer I'm trying to find. Thanks. Anyone know how many teaspoons in an ounce of dried/powdered peppers? Or, about how many pods roughly 2/3 the size of a golf ball it would take to make a pound. Or a rough weight of one said pod?

DocNRock, from the times I've dried hab-type chiles, I've found the chiles dry 10:1. 10 pounds fresh will yield 1 pound dried chiles.

Also, take a look at some of the spices in your cupboard. They all have weights on the jars, and will give you a visual of how much an ounce of powder is.
 
Here is what I go by and my digital scales agree. 1 TBS = 7 grams, 2 14 grams and 4 and ounce all Net WT.

Got it. 1 TBS is 7 grams is about 1/4 oz.

I think he means 2 TBS is 14 grams and 4 TBS is an ounce, making 7 grams 1/4 oz. (Took me a while. :) )

I got it the first time, but I was educated by people hiding their crops in corn fields and national forests. :high: Oh, the good old days before becoming a respectable, upstanding citizen.
 
Thanks for the replies, so far. I'm almost there. Does anyone know the weight of an "average" pod, or how many "average" pods are in a pound (or some other unit of weight). I can do the math from there.

The only scale I have is a bathroom scale. Can't weigh a moderately large Caribbean Red. ;) Otherwise, I can stop by the grocery store at lunch tomorrow and figure it out.
