Hey ya'll, I've finally decided to go ahead and build the UDS. I've been looking around and doing alot of research and decided the UDS is the way to go. See....I want to have brisket and other yum yums on July 4 this year. I have the barrel already as well as most of the hardware. All I need are some handles for the barrel, a barrel dolly, grates and a handle for the lid. I have expansion steel sheets and just need to cut it out for the grates and fire box.

And another thing! I may execute this mission with extreme prejudice to have it ready to challenge Pippy and Nova....

I may try and knock it out even earlier. My ma and sister and my daughter are coming to the big dry ditch for a few days June 14. mrs. blues loves pulled pork and I'm dyin' here for brisket!

I have another barrel sitting in the back yard waiting to be turned into a UDS....I will be doing it better than the last one even if it takes the rest of my life!!! :lol:

I am converting mine into a wood burning device that DOESN'T cook! It will be a whole lot more practical :D
 
Something to look foward to then...pulled pork UDS style. Nuffin but an apple cider vinegar, apple juice and brown sugar wet marinade. Smoked low and slow for 8 hrs with apple wood and mopped every hour. Reduced the sauce in the UDS with the pork. This beacme lunch the next day, yeeeaaahh babay!

Skin removed overight, brined in sea salt and whte sugar, cubed and deep fried then served on top of fresh grilled garlic bread with spanish onion, pulled pork and crispy skin. THSC's nagasav on top. :D
